- 400g beef mince
- 2 cloves garlic, minced
- 2 tsp fresh herbs, chopped
- 60g Mozzarella, grated
- 40g Parmesan, grated
- 1 egg
- 1 tbsp filtered water
- 1 tsp Himalayan sea salt (or to taste)
- cracked black pepper to taste
- 100g zucchini, grated
- 500g of your favourite tomato sauce recipe
Method
- Preheat oven to 180C and line a baking tray.
- Mix everything together in a large bowl and form into walnut-sized balls and place them on the tray.
- Bake for 15-20 mins or until meatballs are cooked through.
- While they are cooking put ‘noodles’ in a large bowl and cover with boiling water. Let them soak for 5-10 mins then cut chop them a bit using kitchen scissors and drain well.
- Serve with the hot meatballs, your favourite tomato sauce recipe and some shredded spinach over the top.
