• 40g cheddar, grated
  • 70g Mozzarella, grated or swiss cheese
  • 6 eggs
  • 1/2 cup almond milk
  • 1/2 cup coconut cream
  • 2 tsp chopped herbs
  • salt and pepper to taste
  • 4 birds eye chillis, sliced
  • 1 spring onion, sliced

Method:

  1. Grease a small baking tray and preheat the oven to 170C.
  2. Mix the cheeses, eggs, almond milk, coconut cream, herbs, and seasoning together in a large bowl then pour into the prepared dish.
  3. Scatter the chilli and spring onion slices over the top and bake for 20-25 mins or until the slice is just firm to touch.
  4. Cool, slice and refrigerate before enjoying with a green salad.
