- 40g cheddar, grated
- 70g Mozzarella, grated or swiss cheese
- 6 eggs
- 1/2 cup almond milk
- 1/2 cup coconut cream
- 2 tsp chopped herbs
- salt and pepper to taste
- 4 birds eye chillis, sliced
- 1 spring onion, sliced
Method:
- Grease a small baking tray and preheat the oven to 170C.
- Mix the cheeses, eggs, almond milk, coconut cream, herbs, and seasoning together in a large bowl then pour into the prepared dish.
- Scatter the chilli and spring onion slices over the top and bake for 20-25 mins or until the slice is just firm to touch.
- Cool, slice and refrigerate before enjoying with a green salad.
